Peel and roughly chop the onions and carrots

Place the pork shank in a large bowl, add the beer, extra virgin olive oil, onions, carrots, bay leaves, rosemary, and juniper berries, cover, and marinate in the refrigerator for two hours

Place the shank and the marinade liquid in a covered baking dish, add a little salt and pepper and bake, on the middle shelf, at 170°C for two and a half hours
Tip: If you don't have a baking dish with a lid, cover it tightly with aluminum foil, sealing it as well as possible

Remove the lid, increase the temperature to 190°C, and continue cooking for another 20 minutes to create a golden, crispy crust
