Put a large pot of salted water on the stove to cook the pasta

Finely chop the shallot and sauté it in a pan with the butter

Add the curry and stir well to lightly toast it, releasing its aroma

Pour in the cream, stir, and let it cook over low heat for 3–4 minutes, then season with salt and pepper

Cook the pasta and drain it al dente, then add it to the pan with the curry and cream, keeping aside a little cooking water

Toss the pasta in the pan, adding grated Parmigiano Reggiano and a little cooking water. Serve decorated with a few oregano leaves
