Don't be fooled by the name, it's a very substantial cake. Perfect for beautiful summer days, decorated maybe with blackberries or raspberries found on a walk
1 -
Soak the gelatin sheets in cold water for at least 10 minutes
2 -
Grind the biscuits and muesli together until they reach a powdery consistency
Tip:
If you don't have muesli, use the same amount of dry biscuits. Digestives are definitely the best to use
3 -
Heat the butter in a small saucepan until completely melted and pour it into the blender jar together with the cookies. Blend for a few seconds until the butter is fully incorporated
4 -
Cover a 25 cm cake tin with parchment paper (this will help to easily remove the cake once cooled), cover the base with the mixture of biscuits and butter, and press down firmly, leveling the surface perfectly
5 -
Mix powdered sugar with plain yogurt until it is perfectly blended
6 -
Put the milk in a small saucepan and add the gelatin sheets, heat over low heat until they are dissolved
7 -
Whip the cream until it becomes solid and frothy, then add the yogurt while continuing to whip. Finally, add the milk with the gelatin. Keep whipping for a few more seconds, then pour the mixture into the cake pan, level it well, and refrigerate for at least 4 hours
8 -
Plate by decorating with mixed berries to taste
Cost
Apart from berries, which can easily be replaced with something else, all the other ingredients are certainly not expensive. Each serving is definitely under two euros in cost
Health
Cookies, butter, cream certainly don't make the recipe light. Save them for a special occasion and be content with just one slice
