Directions

It takes steps in 5 min
1 - Crack the eggs and place them in the container of the immersion blender
2 - Add the garlic, arugula, a pinch of salt and, if desired, some pepper
3 - Start emulsifying with the immersion blender and add the oil in a thin stream until the mayonnaise is perfectly whipped
Tip: Many people use seed oil because the flavor is milder. I prefer a stronger taste, so I use a good extra virgin olive oil
4 - Taste and adjust with salt and pepper, then place in the refrigerator. The sauce can be kept, well sealed, in the fridge for 2 or 3 days

Cost

The only ingredient with a higher cost is extra virgin olive oil. However, we are talking about limited quantities, so the entire recipe costs about 2–3 euros

Health

Olive oil is a very caloric oil, but it can be considered a "good" fat. However, try not to overdo it
