A creative cake that combines the softness of brioche with the elegance of a beautiful homemade cake. I filled it with jam, but you can get creative and make a version with raisins or cinnamon
Mix the flours together with the egg, yogurt, yeast, and sugar until perfectly combined

Add the butter cut into small pieces at room temperature and knead until absorbed

Let the dough rise for two hours in the refrigerator, covered with a cloth

Once risen, roll out the dough on a floured board to a thickness of about half a centimeter and in a rectangular shape

Spread the surface of the dough with jam and roll it up starting from the long side of the rectangle
Tip:
I used peach jam, but feel free to choose your favorite

Cut the roll into slices about 5 centimeters thick and place them in a buttered cake tin. Let rise for another hour in the turned-off oven

Meanwhile, prepare the glaze by adding water to the powdered sugar one drop at a time until it has a thick and creamy consistency

Bake in a static oven at 180°C (350°F) for 35-40 minutes. Once baked, decorate with the glaze
Tip:
If you have a silicone cake tin, use it to prevent overcooking the edges of the cake

After baking, insert a toothpick in the center of the cake. If it comes out dry, it's ready; otherwise, bake for a few more minutes. Serve covered with the prepared glaze

The ingredients are all inexpensive, with the entire recipe costing around 4 euros, but if you make homemade jam, the cost decreases significantly

For a dessert, it's not too heavy; the yogurt helps keep the cake soft without using too much butter
