1 Sausage Risotto - step 1
Remove the casing from the sausage and crumble it with your hands or a fork

Finely chop the shallot and sauté it with a bit of extra virgin olive oil over low heat until it becomes translucent

Add the sausage to the sautéed shallot and brown it for a few minutes, until it’s lightly golden

Deglaze with the red wine, then once it has evaporated, set it aside
