Directions

It takes 6 steps in 40 min
1 Pasta Norma - step 1
Cut the eggplant into approximately one centimeter cubes, place them in a colander, and sprinkle with salt. Let it rest for at least 30 minutes
2 Pasta Norma - step 2
Put a pan on the heat and add the tomato sauce, a little bit of salt, and a drizzle of oil. Heat on low heat for a few minutes, then turn off the heat
3 Pasta Norma - step 3
Put a pot of abundant salted water on the stove
4 Pasta Norma - step 4
Put a tall and narrow saucepan on the stove with plenty of frying oil
5 Pasta Norma - step 5
Rinse the eggplants thoroughly, dry them, and fry them until they have acquired a nice brown color. Once drained, taste them and, if necessary, adjust the salt
6 Pasta Norma - step 6
Cook the pasta and drain it al dente. Place it in the pan with the tomato sauce along with half of the fried eggplants. Sauté for 1 or 2 minutes over high heat and serve with a sprinkling of grated ricotta

Cost

It is certainly not an expensive dish, it reminds us of Italian peasant cuisine. Each portion costs under 2 euros

Health

What really gets you are fried eggplants, we can certainly not consider it a light dish. Avoid it during lunch breaks in the office if you want to stay awake in the afternoon
