Cut the eggplant into approximately one centimeter cubes, place them in a colander, and sprinkle with salt. Let it rest for at least 30 minutes

Put a pan on the heat and add the tomato sauce, a little bit of salt, and a drizzle of oil. Heat on low heat for a few minutes, then turn off the heat

Put a pot of abundant salted water on the stove

Put a tall and narrow saucepan on the stove with plenty of frying oil

Rinse the eggplants thoroughly, dry them, and fry them until they have acquired a nice brown color. Once drained, taste them and, if necessary, adjust the salt

Cook the pasta and drain it al dente. Place it in the pan with the tomato sauce along with half of the fried eggplants. Sauté for 1 or 2 minutes over high heat and serve with a sprinkling of grated ricotta

Health

What really gets you are fried eggplants, we can certainly not consider it a light dish. Avoid it during lunch breaks in the office if you want to stay awake in the afternoon
