Cook the spinach in a pan with a pinch of salt, once cooked set aside to cool down

Cut the phyllo pastry into squares of about 10/12 cm, then place them in muffin pans, brushing each layer with a little olive oil. Place them staggered between one layer and the next, using 3 or 4 for each basket

Beat the eggs and combine them with spinach, grated Parmesan cheese, and a pinch of salt. Mix until everything is perfectly blended
Tip:
If you want a tastier filling, you can add sausage, diced cheese, or anything else

Fill each basket with some egg and spinach filling and cover with a sprinkling of grated Parmigiano Reggiano cheese and a drizzle of oil

Bake at 180 degrees Celsius for 30 minutes and let them cool slightly before serving

There is not a single expensive ingredient, each portion is definitely under one euro

It all depends on the filling, but we can't define it as a light recipe anyway
