It is a dish from the humble culinary tradition, simple and genuine. It originates from the art of reuse, transforming a few ingredients into a recipe rich in flavor. Soft on the inside and wrapped in a fragrant sauce, they win over both adults and children. They represent home cooking, made of slow gestures and familiar aromas
Cut the bread into pieces and place it in a bowl with the milk. Let it soak for a few minutes, then squeeze it well
2
Place the bread, eggs, grated Parmigiano Reggiano, salt, and chopped parsley in a bowl and mix until you obtain a soft but workable mixture
Tip:
If too soft, add a little breadcrumbs until you reach the right consistency
3
Compact small portions of dough and shape meatballs about the size of a walnut
4
Heat some oil in a large pan and brown the meatballs on all sides, then set them aside
5
In the same pan, sauté the chopped garlic and add the tomato purée with a little salt
6
Add the meatballs to the sauce and let them cook for another 15–20 minutes, turning them gently. Serve garnished with some parsley and crushed taralli
