Let's be clear, every good Bolognese family has its own recipe for ragù. This is a recipe that comes very close to the "original", whose ingredient ratios are even registered with the Chamber of Commerce
Cut the bacon into thin strips, place it in a pan, and let it brown
2
Finely chop the onion and carrots, trying to make them as thin as possible. They should melt during cooking
3
Cook the bacon over medium-high heat until most of the fat has melted. Add the minced onion and carrots to the melted bacon and let them sauté for a few minutes until they become golden brown
4
Add the ground beef and cook over high heat until it is perfectly browned
5
To simmer with red wine and when you no longer smell alcohol, add milk and bring to a boil
6
Add the tomato puree and keep stirring on high heat until it starts boiling again. Then, add the nutmeg and salt and let it simmer on the smallest burner with the lid on for two hours
7
After two hours, remove the lid, taste, and adjust the salt if necessary, then let it cook for another hour until it reduces
Cost
Beef meat slightly raises the price, but it still remains an excellent seasoning at a reasonable price
Health
The fat in bacon significantly increases the calories, save it for Sunday's meal
