A very humble dish, but believe me, on cold winter evenings, it's ideal to enjoy in front of a cozy fireplace. The only caution is not to prepare it for a romantic dinner!
Cut the onions in half, then into sections about 4 or 5 millimeters thick and set aside

Melt the butter in a large pot and when it's hot, add the onions and sugar

Sauté the onions over medium heat for 20 minutes, stirring continuously

When the onions are perfectly caramelized, deglaze with the white wine, allowing the alcoholic part to evaporate

Add the flour, stirring vigorously until well combined

Add the salt and half of the hot broth, then let it simmer over low heat

Gradually add the remaining broth as needed; in total, the soup should cook for another 20 minutes
Tip:
I like a thick soup, but by adjusting the amount of broth, you can keep it thinner

Meanwhile, prepare the croutons by placing the bread slices in a pan over medium heat with a drizzle of olive oil, then place them on top of the soup before serving
Cost
It's such a humble dish that I struggle to even give a price per serving, but it's definitely well under one euro
Health
The only fat in the dish is the butter, which helps to create a velvety soup. If you prefer a lighter version, you can almost completely eliminate it
