Cut the melon into wedges, peel it, and slice it into sections about half a centimeter thick, then set aside

Oil a 25 cm cake pan and arrange the melon slices on the bottom to cover the entire surface

Blend the remaining melon (about half) with an immersion blender and set aside

Break the eggs into a bowl and beat them with the sugar using an electric mixer for at least 5 minutes

Add the milk, melon puree, oil, baking powder, and flour, then continue blending for another one or two minutes

Pour the mixture into the cake pan and bake at 180°c (350°f) for 40 minutes
Tip:
The baking time depends on the oven and the type of melon used. At the end of the baking time, insert a toothpick into the center of the cake; if it comes out wet, continue baking for another 5 to 10 minutes

Remove the cake from the oven and wait for it to cool slightly before turning it out
Cost
It is certainly not an expensive recipe; if made when melons are in season, it costs just a few euros for the entire cake
Health
I would consider this cake a light dessert. After all, there's no butter, and only a reasonable amount of sugar is used, as the melon is already sweet. It is perfect as a healthy and light breakfast for every day
