A simple and wholesome dessert, perfect for any occasion. The crumbly shortcrust pastry base holds a soft and delicious heart of jam. It can be prepared with different jams, from the most classic to the most unique. Ideal for breakfast, snack, or as a homemade and comforting dessert
Combine in a bowl (or in the stand mixer) the flour, baking powder, sugar, and salt

Add the cold butter in cubes and quickly work until you obtain a crumbly mixture

Incorporate the egg and yolk and knead quickly until the dough comes together

Form a dough ball, wrap it with cling film, and let it rest in the fridge for at least 30 minutes

Butter and flour a 28 cm cake tin

Roll out about 2/3 of the dough to a thickness of 4–5 mm
Tip:
To make transferring the dough to the pan easier, roll it out between two sheets of floured parchment paper

Line the previously buttered pan, pressing lightly and removing the excess dough

Pour in the jam and spread evenly

With the remaining dough, roll out a rectangle and cut 1 cm wide strips to arrange on top of the jam in a classic lattice pattern

Bake in a preheated static oven at 180°C for about 35–40 minutes

The jam tart is an inexpensive dessert, made with simple and easily available ingredients. The total cost is just a few euros, especially if homemade jam is used. It is therefore a sweet and genuine solution within everyone's reach
