An easy and elegant cake, it has a quirky appearance but is perfect for any occasion. The crunchy exterior perfectly complements the softness of the cream inside, and a pinch of cinnamon adds a spicy note
Prepare the cream by mixing the eggs, sugar, and milk in a pot with a whisk, gradually adding the sifted flour while stirring continuously until the mixture is smooth and lump-free
2
Place the pot on the stove and cook over moderate heat, stirring vigorously with the whisk until the cream thickens. Then, let it cool for at least 20 minutes, stirring occasionally
3
While the cream cools, place the flour, baking powder, butter, sugar, salt, and egg in a bowl
4
Mix with your fingertips, avoiding compacting the mixture too much, until it reaches a sandy consistency and the butter is fully absorbed
5
Add the cinnamon, mix gently until absorbed, and let the mixture rest in the refrigerator for at least 10 minutes
6
Preheat the oven to 170°C, then line a 25 cm cake pan with parchment paper, butter it, and lightly flour it
7
Cover the bottom of the cake pan with part of the previously prepared dough, pressing it down slightly
8
Pour the cream into the center of the pan, making sure not to reach the edges
9
Finally, cover with the remaining dough, gently compacting along the edges to prevent the cream from leaking out
10
Bake at 170°C for 40–45 minutes. Once out of the oven, let it cool and serve dusted with a bit of powdered sugar
Cost
There isn’t a single expensive ingredient, so we can certainly call it a budget-friendly cake. Just a few euros are enough for the entire recipe
Health
There are very few desserts that can be considered light, and unfortunately, this cake is not one of them. Enjoy a generous slice, but skip the second one unless you're willing to run for an hour at the park to burn it off!
