Melt the chocolate with the butter in a bain-marie, stirring until smooth, then let it cool slightly

Break the eggs and separate the yolks from the whites. Beat the yolks with half of the sugar until pale and fluffy, then add the rum and mix

Whip the egg whites with a pinch of salt and the remaining sugar until stiff and glossy

Add the melted chocolate and ground almonds to the yolk mixture and mix well

Finally, gently fold in the whipped egg whites, mixing from bottom to top to avoid deflating them

Pour the batter into a greased and floured 24 cm baking pan

Bake at 170°C for 40–45 minutes, let it cool slightly, and decorate with powdered sugar

Once baking is complete, insert a toothpick in the center of the cake: if it comes out dry, it is ready; otherwise, extend the baking for a few more minutes
