Place the onions in a bowl with salt and sugar. Cover and let rest for at least 2 hours

Pour the onions with all their liquid into a large pot. Add the oil and cook over very low heat, covered, for about 2 hours, stirring occasionally

Add the crushed peeled tomatoes and continue cooking for at least 1 and a half hours, always on low heat, until you obtain a thick cream
