Eviscerate and clean the moscardini, taking care to remove the beak and eye section, cut them into pieces and set aside

Peel and finely slice the onion, place it in a pot with plenty of olive oil and sauté over low heat for a few minutes

Add the moscardini, turn the heat to high and cook for a few minutes

Add the tomato puree and salt, then cover with a lid and cook for 40 minutes

At the end of cooking, taste, if necessary, adjust with salt and pepper and cook uncovered over medium heat until the sauce thickens

Toast some slices of bread with a drizzle of oil in a pan. Serve the moscardini with the toasted bread and a sprinkle of chopped parsley

Although it is fish, i want to define it as an economical dish. After all, it is inexpensive fish, especially domestic, so fresh and inexpensive. Each portion costs around 4 euros
