Directions

1 Spinach and Ricotta Meatballs - step 1
Cook the spinach in a pan with half a glass of water and a pinch of salt
2 Spinach and Ricotta Meatballs - step 2
Once the spinach is cooked and completely dried, remove it from the pan, squeeze out excess water, and finely chop it
3 Spinach and Ricotta Meatballs - step 3
Blend the Parmesan cheese and then the bread, setting them aside
Tip: If you don’t have fresh bread, packaged sandwich bread works just fine

In a bowl, combine the ricotta, chopped spinach, Parmesan, egg, and bread, then mix until you get a homogeneous mixture
5 Spinach and Ricotta Meatballs - step 5
Shape the meatballs into spheres about 3 centimeters in diameter. They should be the size of a walnut

Place breadcrumbs in one plate and a beaten egg in another for the breading
7 Spinach and Ricotta Meatballs - step 7
Dip each meatball first in the egg, then in the breadcrumbs, and fry them for one or two minutes in hot oil
Tip: If you have a kitchen thermometer, ensure the oil stays between 170 and 180 degrees Celsius

Cost

This recipe is affordable and accessible to everyone, using simple and easy-to-find ingredients. The total cost is just a few euros, depending on the quality of the ricotta and Parmesan

Health

These meatballs are tasty but, since they are fried, should be eaten in moderation. Spinach provides fiber, iron, and vitamins, while ricotta offers protein and calcium. For a lighter version, they can be baked or cooked in an air fryer
