As a huge fan of Bud Spencer and Terence Hill, I couldn't help but make a great classic from all their movies. It's not easy to reinterpret a very simple dish in an elegant way, but trying doesn't cost anything

Peel the sausages, put the meat in a bowl and, if desired, add some fresh aromatic herbs, mixing everything together with your hands
Tip:
I use thyme but marjoram or a little rosemary can also be used

In a large pan, sauté finely chopped onion with a drizzle of oil. Once it becomes golden brown, add the beans (if using fresh beans, they should be cooked beforehand in water). Add the broth and let it cook over high heat for a few minutes. Taste and adjust the salt, then set it aside
Tip:
If you don't have broth, you can also use water, but add a pinch of extra salt

Divide the sausage mixture into small portions (3 each) and shape them into small burgers. Cook the sausages in a pan over medium-high heat without adding anything, not even a drop of oil. When they are golden brown, flip them over and continue cooking on the other side

Put the previously prepared beans in the immersion blender's jar and emulsify with a generous drizzle of olive oil

Plate by putting the bean velouté at the bottom, lay the sausages on top, and, if you want, also a slice of toasted bread
Cost
Sausage is one of the cheapest meats, but if properly seasoned, it will give you a great flavor. The rest of the ingredients have a negligible cost. Each portion is priced at under 3 euros
Health
Sausage is certainly not light, it's a dish for winter, save it for cold evenings by the fireplace and avoid asking for seconds
