Score the meat on the skin side with cuts 1 centimeter deep and set aside

Prepare the marinade with white wine, olive oil, mustard, and pepper. Put the liquid in a food bag along with the thigh and let it marinate for an hour in the refrigerator

Place the meat on a sheet of parchment paper placed on top of a sheet of aluminum foil. Raise the corners of the foil and pour the remaining marinade liquid, then sprinkle the entire surface of the meat with salt and chopped rosemary

Close the foil as tightly as possible, being careful not to puncture it, and bake at 210 degrees for two hours

After cooking, open the foil to expose the meat and continue cooking at 240 degrees for another 15 minutes, or until the skin is slightly golden and crispy
