Method

Heat a wide pan with the sunflower oil, bring to temperature, and toast the almonds for a couple of minutes. Once toasted, remove them from the pan and set aside

Cut the chicken breast into strips or cubes of about 2 centimeters and set aside

Clean and finely slice the spring onion, add it to the pan with the remaining oil from the almonds and sauté over medium heat until lightly golden

Lightly flour the chicken and brown it in the pan together with the spring onion over high heat

Deglaze with white wine and cook, stirring continuously, over high heat

Add soy sauce, toasted almonds, honey and, if necessary, a little salt. Continue cooking until a thick sauce forms
Tip: Soy sauce can be more or less salty. After adding it, cook for one minute, then taste and add salt only if needed

Storage

Almond chicken can be stored in the refrigerator, in an airtight container, for up to 2 days. Freezing is strongly discouraged as the texture of the meat and the crunchiness of the almonds would be compromised.
