Debone and cut the chicken breast into 2–3 cm cubes, making sure to remove cartilage and excess fat

Wash the zucchini and cut them into cubes of about 2–3 cm

Place the chicken and zucchini pieces in a bowl with a bit of olive oil and mustard, mix, and let rest for 15 minutes

Pour the breadcrumbs into a plate and season with olive oil, salt, pepper, and chopped rosemary

Coat the chicken and zucchini cubes in the breadcrumbs, pressing gently to make it stick well on all sides, then form the skewers

Place the skewers in the air fryer basket without overlapping, leaving some space between each, then drizzle with a little oil

Cook at 190°C (375°F) for 15–18 minutes until the coating is nicely golden, then serve with a few slices of lemon
