Clean the pumpkin by removing the skin, then roughly chop it using a blender

Cut the speck into strips or small cubes and set it aside

Heat the broth until it is almost boiling. Meanwhile, toast the rice in a pan with a drizzle of oil

Once the rice is toasted (this will take just a couple of minutes), lower the heat and deglaze with white wine

Increase the heat and add the grated pumpkin, speck, and half of the broth, stirring gently

If you want to decorate the dish, set aside some speck and brown it in a pan
