Bring the potatoes to a boil in a pot with plenty of water. The cooking time depends on the size of the potatoes, but usually, 40 minutes is enough

Prepare the wafers by placing the grated Parmesan cheese (20 grams per wafer) in a pan over medium heat and cooking until it has melted and dried

After cooking, transfer each Parmesan wafer into a bowl so that as it cools, it retains a concave shape, then set them aside

Once the potatoes are cooked, peel them, cut them into coarse pieces, and place them in a bowl to cool

Try piercing the potatoes with a fork; if they are not very soft, extend the cooking time by about ten minutes

Finely chop the parsley and set it aside
