Kaiserschmarren

Kaiserschmarren
It is a traditional Austrian dessert, a kind of fluffy and slightly caramelized sweet omelette. Made with eggs, milk, flour, and sugar, it is broken into irregular pieces during cooking and served with powdered sugar and raspberry or blueberry jam

Directions

It takes 5 steps in 20 min
1 Kaiserschmarren - step 1
Break the eggs and separate the yolks from the whites. Combine the sugar with the yolks and mix well with a whisk. Add the flour and milk, and whisk for at least 1 or 2 minutes
2 Kaiserschmarren - step 2
Beat the egg whites until stiff and gently fold them into the rest of the mixture with upward movements
3 Kaiserschmarren - step 3
When the mixture is perfectly smooth, heat a large pan, generously butter the bottom, and pour in the mixture. Cover with a lid and cook over moderate heat for a few minutes
4 Kaiserschmarren - step 4
When the bottom of the Kaiserschmarren has turned a nice golden brown, flip it upside down to cook the other side. If it’s too difficult to flip it whole, you can easily break it into pieces
5 Kaiserschmarren - step 5
Once cooked, divide the Kaiserschmarren into pieces about 3 or 4 centimeters in size, placing a few pieces of butter in the gaps between them. Once the butter has melted, the cooking is complete, and you can serve it with a sprinkle of powdered sugar and mixed berry jam

Cost

There is no expensive ingredient; it is a very frugal dish, with each portion costing less than one euro

Health

I wouldn’t call it a heavy dessert; it uses very little butter and just the right amount of sugar. It’s perfectly fine as an everyday breakfast too
