1 Hamburger Buns - step 1
Combine the flours, fresh yeast, salt, and sugar in a bowl and mix to blend everything together

Add the oil, milk, and water a little at a time, continuing to knead until the dough is firm and not sticky, then place it in the fridge to rise in a bowl covered with plastic wrap for one hour

Once the first rise is complete, divide the dough into 6 portions of 140 grams each, then shape them as round and even as possible

Grease the surface of the buns with a little seed oil and let them rise for 3 hours on a baking tray in the oven turned off
Tip: In summer, if it's very hot, you can reduce the rising time by 30 minutes

After the second rise, brush the top of the buns with a bit of milk and, if desired, sprinkle with sesame seeds

Bake at 180°C (356°F) for 15 minutes in a static oven, then, if needed, an additional 2–3 minutes in fan mode to create a golden crust on the surface
