It takes 6 steps in 2 h 45 min
1 - Boil the potatoes in a pot with plenty of water until they become very soft
Tip: To check doneness, pierce them with a fork; it should pass through completely without effort
2 - Peel the potatoes, mash them and set them aside to cool
3 - Mix in a large bowl the flours, mashed potatoes, salt, oil, water and yeast. Then let it rise in the bowl covered with plastic wrap until doubled (about 2 hours)
4 - Transfer the dough into a well-oiled 27 cm pan. Grease your hands and press it with your fingertips until it covers the entire surface
5 - Cut the tomatoes in half and cover the focaccia by placing them cut side up, then let rise for another 40 minutes in the turned-off oven
6 - Sprinkle the surface with a bit of salt, some dried oregano and a generous drizzle of olive oil, then bake at 220°C in static mode for 25/30 minutes
Tip: In the last minutes, turn the oven to maximum and switch to fan mode to form a nice crust on the surface

Focaccia barese is an inexpensive preparation, as it requires simple and common ingredients. With a minimal expense you can get a large tray, enough to feed the whole family. It is therefore a convenient choice for snacks, light meals or quick lunches
