Debone and cut the chicken breast into cubes, taking care to remove any cartilage and excess fat

Finely chop the shallots and garlic, then set them aside

Heat the oil in a large pan and sauté the shallots and garlic for 5–6 minutes, until golden brown

Add the curry and turmeric and stir for 1 minute to release their aromas

Add the chicken cubes and brown them until well golden on all sides (about 5–7 minutes)

Tip: The original recipe uses coconut milk instead of cream — if you have it, use it for an even more exotic and velvety result
