Break the eggs and separate the yolks from the whites

Put the sugar in a bowl with the yolks and whisk until you get a fluffy mixture

Add the yogurt to the whipped yolks and mix at low speed with an electric mixer for a few seconds

Sift in the flour and mix for a few more seconds until fully incorporated

Preheat the oven to 150°C, placing a baking pan with water at the bottom to keep the oven humid and ensure a gentler baking process

Line the cake pan with parchment paper, making sure to also place a strip of paper at least ten centimeters high along the sides to prevent the cake from overflowing as it rises

Spread butter on the surface of the pan to keep the parchment paper in place

Beat the egg whites with a pinch of salt until very stiff peaks form

Gently fold the beaten egg whites into the bowl with the yolks, using a spatula and mixing from top to bottom

Pour the batter into the cake pan and bake at 150°C for 70 minutes in static mode

Once baking is complete, leave the cake to cool in the oven, turned off and slightly open, for 15 minutes to prevent it from deflating
