Roughly chop the leek and carrots, then set them aside

Place a large pan over the heat with plenty of olive oil, bring to temperature, and add the leek and carrots prepared earlier

As soon as the leek is golden, add the meat to the pan and sear on each side over high heat

When the meat is lightly browned with no red visible, add the beer and salt

Cook on high heat until it reaches a boil, then reduce the heat to low and cook for 15 minutes to evaporate the alcohol in the beer
