Boil the potatoes in a pot with plenty of water until they are very soft
Tip:
To check if they are cooked, pierce them with a fork; it should go through easily without resistance

Peel the potatoes, mash them and set them aside to cool

In a large bowl, knead the flours, mashed potatoes, salt, oil, water, and yeast

Let the dough rise in the bowl covered with plastic wrap until doubled in size (about 1 and a half hours)

Transfer the dough into a well-oiled 27 cm baking pan. Grease your hands and press it with your fingertips until it covers the entire surface

Cut the tomatoes in half and cover the focaccia, placing them cut side up, add the black olives, then let rise for another 40 minutes in the turned-off oven

Sprinkle the surface with a little salt and a generous drizzle of olive oil, then bake at 220°C in static mode for 20-25 minutes
