Peel the potatoes and grate them using a coarse grater

Place the potatoes on a plate with the salt and let them rest for about 30 minutes to allow excess water to be released

Squeeze out the remaining water from the potatoes and transfer them to a bowl along with the salt, pepper, grated parmesan, olive oil, and chives

Mix everything until you get a uniform mixture

Form discs about 8–9 cm in diameter directly in the air fryer basket using a round mold

Make sure they are well compacted to prevent them from falling apart during cooking

Cook at 180°C (356°F) for 15 minutes, flip the rösti, then cook for another 3 minutes at 200°C (392°F)
