A simple dish, ready in a few minutes and that reminds me of lunches with friends by the sea. Over the years, it has become one of my son's favorite dishes, I couldn't not share the recipe

Ingredients

Pasta (Spaghetti or something else)

Clams (with shell)
400 g
2 cloves

Directions

It takes 6 steps in 20 min
1 - Soak the clams in a bowl of saltwater for at least a couple of hours; this will help clean them and make them release any sand
2 - Begin heating a pot with salted water for cooking the pasta
3 - Heat a large skillet with plenty of olive oil and whole garlic cloves. Bring it to temperature and, after a couple of minutes, remove the garlic
4 - Add the clams to the skillet along with half a glass of water. Cook over high heat with the lid on for a minute and then remove it, continuing to cook until the sauce has thickened slightly
Tip: After cooking, keep only the prettiest shells for plating, removing the mollusk from inside. Taste and adjust the salt if necessary
5 - Cook the pasta in the boiling water and drain it two minutes before the cooking time, making sure to reserve a cup of cooking water. Sauté it in the skillet with the clams, adding a bit of cooking water until a thick creamy sauce forms. Finally, add chopped parsley and mix for a few seconds
6 - Plate as shown in the photo, garnishing with the clams, another sprinkle of fresh parsley, and a generous drizzle of olive oil

Fresh clams are not cheap; each portion is around 4 euros, but it's worth it

Health

t's certainly not a heavy pasta dish; in fact, I would almost call it "light." You can include it in your dietary plan during a diet
