A simple dish, ready in a few minutes and that reminds me of lunches with friends by the sea. Over the years, it has become one of my son's favorite dishes, I couldn't not share the recipe

Soak the clams in a bowl of saltwater for at least a couple of hours; this will help clean them and make them release any sand

Begin heating a pot with salted water for cooking the pasta

Heat a large skillet with plenty of olive oil and whole garlic cloves. Bring it to temperature and, after a couple of minutes, remove the garlic

Add the clams to the skillet along with half a glass of water. Cook over high heat with the lid on for a minute and then remove it, continuing to cook until the sauce has thickened slightly
Tip:
After cooking, keep only the prettiest shells for plating, removing the mollusk from inside. Taste and adjust the salt if necessary

Cook the pasta in the boiling water and drain it two minutes before the cooking time, making sure to reserve a cup of cooking water. Sauté it in the skillet with the clams, adding a bit of cooking water until a thick creamy sauce forms. Finally, add chopped parsley and mix for a few seconds

Plate as shown in the photo, garnishing with the clams, another sprinkle of fresh parsley, and a generous drizzle of olive oil

Fresh clams are not cheap; each portion is around 4 euros, but it's worth it

t's certainly not a heavy pasta dish; in fact, I would almost call it "light." You can include it in your dietary plan during a diet
