Clean the baby octopus under running water, taking care to remove all impurities and emptying the sac of viscera

Put a pan of water on the fire with vinegar, when it reaches a boil add the baby octopus and lower the heat to minimum. Let it cook for 40 minutes with the lid on

Once cooked, cut the baby octopus into pieces, removing the beak and eyes, then set aside

Meanwhile, cut the cherry tomatoes and sauté them in a pan over high heat with olive oil and salt

When the tomatoes are almost ready, add the baby octopus, a little salt, and continue cooking for a few minutes

Cook the pasta and drain it al dente, then toss it in the pan with the tomatoes and baby octopus. Serve it with plenty of chopped parsley
