Place a large skillet on the heat with a drizzle of oil, add the bell peppers and let them sear for a minute. Add water, a little salt, and let them cook for about ten minutes with a lid

Set aside a few pieces of bell pepper and transfer the rest to the blender container. Blend until it becomes a nice orange cream

In the same pan where the bell peppers were cooked, add a generous drizzle of oil and sear the chicken thighs for a few minutes over high heat. Deglaze with the wine and, when the alcohol smell has dissipated, add the vinegar and sugar. Finally, add the cream and the pieces of bell pepper and let it cook over low heat for at least one hour and twenty minutes. Be sure to taste and adjust the salt if necessary halfway through the cooking

At the end of cooking, turn the heat to the maximum and thicken the sauce

Plate it, decorating with the remaining whole bell pepper pieces and some herbs to your liking
Cost
Chicken is relatively inexpensive, and the rest of the ingredients have a nearly negligible cost. The cost per serving can be estimated at around 2 euros
Health
Chicken thigh is not the leanest part, and the skin contains a lot of fat. It's a hearty dish but not overly fatty. Feel free to have seconds, but only if you've just come back from a good run in the park
