Place the semolina flour and the 00 flour in a bowl, mix until they are combined. Gradually add the brewer's yeast, honey, and water, then add the salt while continuing to knead

Continue kneading for a few minutes until it becomes perfectly smooth, then grease the dough with olive oil and let it rise in a bowl covered with a kitchen towel for two hours

Once risen, divide it into three portions. Shape each portion into an elongated form, then place them on a lightly floured kitchen towel, lifting the edges so the dough doesn't spread too much, and let them rise for another hour

Preheat the oven to 220 degrees Celsius and prepare a baking tray lined with lightly floured parchment paper. Carefully transfer each baguette to the tray, avoiding touching them too much, and make a few cuts on the surface with a sharp knife

Bake for 15 minutes on the lower rack of the oven, then another 10 minutes on the upper rack. Remove from the oven and let them rest for half an hour before slicing

The cost of homemade bread is certainly low. For two baguettes, we spend less than one euro
Health
Unfortunately, bread is rich in carbohydrates, so try to limit your portions
